Seasoned Cod with Garlicky Mashed Potatoes, Asparagus, and Broccoli

Ingredients

  • 1 1/2 lb cod fillet
  • 6 clove garlic
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 whole lemon
  • 2 tbsp olive oil
  • 2 lb russet potato (Side: Garlicky Mashed Potatoes)
  • 4 tbsp unsalted butter (Side: Garlicky Mashed Potatoes)
  • 1/2 cup milk (Side: Garlicky Mashed Potatoes)
  • 1 lb asparagus (Side: Asparagus)
  • 1 tbsp olive oil (Side: Asparagus)
  • 1 lb broccoli (Side: Broccoli)
  • 1 tbsp olive oil (Side: Broccoli)

Tips & Substitutions

  • Substitute: halibut or haddock fillet instead of cod
  • Substitute: roasted tofu slabs for cod
  • Pat the cod dry before seasoning so the spices stick better and the fish browns lightly when cooked.
  • Warm the milk before adding it to the potatoes so the mashed potatoes stay smooth and creamy.

Instructions

  1. Prep: peel and cut 2 lb russet potatoes into 1 1/2-inch chunks. Peel and mince 4 garlic cloves; reserve 2 whole garlic cloves for the cod seasoning.
  2. Place potatoes and the 4 minced garlic cloves in a large pot, cover with water, bring to a boil, and cook 15–18 minutes until fork-tender.
  3. Preheat oven to 425°F. Toss 1 lb broccoli with 1 tbsp olive oil, salt, and pepper. Roast on a sheet pan 18–20 minutes until browned and tender.
  4. Toss 1 lb asparagus with 1 tbsp olive oil, salt, and pepper. Add asparagus to the oven during the last 10–12 minutes of the broccoli cooking time so both finish together.
  5. Pat 1 1/2 lb cod fillets dry. In a small bowl, mix minced garlic from the remaining 2 cloves, 1 tsp paprika, 1 tsp dried oregano, and 2 tbsp olive oil. Rub over the cod and squeeze juice from 1 whole lemon over the fish.
  6. Heat a large skillet over medium heat and cook the cod 4–5 minutes per side until opaque and flaky.
  7. Side: Garlicky Mashed Potatoes – Drain potatoes and garlic, return to the pot, and mash with 4 tbsp butter and 1/2 cup warm milk until smooth. Season with salt and pepper.
  8. Side: Asparagus – Remove asparagus from oven once tender-crisp and serve warm.
  9. Side: Broccoli – Remove broccoli from oven when browned and tender and serve warm.
