Spaghetti with Ground Turkey Roasted Zucchini and Caesar Salad

Ingredients

  • 1 lb ground turkey
  • 3 clove garlic
  • 1 whole onion
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • 12 oz spaghetti
  • 1 28 oz can crushed tomato
  • 1 head romaine lettuce (Side: Caesar Salad)
  • 2 cup kale (Side: Caesar Salad)
  • 1 whole cucumber (Side: Caesar Salad)
  • 2 tbsp parmesan cheese (Side: Caesar Salad)
  • 1/2 cup whole grain crouton (Side: Caesar Salad)
  • 1/4 cup greek yogurt (Side: Caesar Dressing)
  • 2 tbsp olive oil (Side: Caesar Dressing)
  • 2 tbsp lemon juice (Side: Caesar Dressing)
  • 1 clove garlic (Side: Caesar Dressing)
  • 1 tsp dijon mustard (Side: Caesar Dressing)
  • 1 tsp worcestershire sauce (Side: Caesar Dressing)
  • 3 whole zucchini (Side: Roasted Zucchini)
  • 1 tbsp olive oil (Side: Roasted Zucchini)

Tips & Substitutions

  • Substitute: use store-bought marinara sauce if you don’t have time to make the tomato sauce
  • Substitute: swap spaghetti with whole wheat or any pasta you already have on hand
  • Make the meatballs in advance and freeze them—this saves time on busy nights.
  • Massage the kale briefly before tossing in the salad; it makes it more tender and enjoyable.

Instructions

  1. Prep: mince 3 cloves garlic and dice 1 whole onion; rinse and dry the greens for the salad; preheat oven to 400°F.
  2. Side: Roasted Zucchini – Slice 3 whole zucchini into half-moons. Toss with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 18–20 minutes, flipping halfway.
  3. Heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 lb ground turkey and cook for 6–8 minutes, breaking it up as it browns.
  4. Add diced onion and the minced garlic to the skillet and cook 3–4 minutes until softened.
  5. Stir in 1 tsp dried oregano, 1 tsp dried basil, and 1 (28 oz) can crushed tomato. Bring to a simmer and cook 12–15 minutes over medium-low. Season with salt and pepper.
  6. Cook 12 oz spaghetti in salted boiling water 9–10 minutes until al dente. Drain and toss with the turkey tomato sauce.
  7. Side: Caesar Salad – Chop 1 head romaine and 2 cups kale. Dice 1 whole cucumber. Whisk 1/4 cup greek yogurt, 2 tbsp olive oil, 2 tbsp lemon juice, 1 minced garlic clove, 1 tsp dijon mustard, and 1 tsp worcestershire sauce. Toss greens and cucumber with dressing and top with 2 tbsp parmesan and 1/2 cup croutons.
