Homemade Focaccia Pizza with Mixed Green Salad

Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups warm water
  • 4 tbsp olive oil
  • 1 tsp sugar
  • 1 1/2 tsp salt
  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup sliced bell pepper
  • 1 cup sliced mushrooms
  • 1/2 cup sliced pepperoni
  • 1 tsp dried oregano
  • 4 cups salad greens (Side: Mixed Green Salad)
  • 1 cup cherry tomato (Side: Mixed Green Salad)
  • 1/2 cup cucumber (Side: Mixed Green Salad)
  • 2 tablespoons olive oil (Side: Mixed Green Salad)
  • 1 tablespoon red wine vinegar (Side: Mixed Green Salad)

Tips & Substitutions

  • Substitute: turkey pepperoni or vegetarian meatless pepperoni slices
  • Substitute: whole wheat flour for half of the all-purpose flour for added fiber
  • Let the dough rise in a warm, draft-free spot for the best texture.
  • Brush focaccia with olive oil before baking for a golden, crisp crust.

Instructions

  1. In a large mixing bowl, combine 1 1/4 cups warm water, 1 teaspoon sugar, and 2.25 teaspoons instant yeast. Let stand for 5 minutes until foamy.
  2. Add 3 1/2 cups all-purpose flour, 1.5 teaspoons salt, and 2 tablespoons olive oil. Mix until a shaggy dough forms.
  3. Knead on a lightly floured surface for 8–10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise for 1 hour, until doubled in size.
  5. Preheat oven to 425°F. Press risen dough into a greased baking sheet, forming an even layer about 3/4-inch thick.
  6. Brush top with 1 tablespoon olive oil and use fingertips to dimple the surface. Let rest 15 minutes.
  7. Bake for 12–15 minutes until lightly golden, then remove from oven.
  8. Spread 1 cup pizza sauce evenly over baked focaccia, then top with 1 1/2 cups shredded mozzarella, 1 cup sliced bell pepper, 1 cup sliced mushrooms, and 1/2 cup sliced pepperoni. Sprinkle 1 teaspoon dried oregano over the top.
  9. Return to oven and bake another 10 minutes until cheese is melted and bubbly. Add salt and pepper to taste.
  10. Side: Mixed Green Salad – In a large bowl, combine 4 cups salad greens, 1 cup cherry tomato (halved if desired), and 1/2 cup diced cucumber. Whisk together 2 tablespoons olive oil (Side) and 1 tablespoon red wine vinegar, toss with salad, and season with salt and pepper.
  11. Slice focaccia pizza into pieces and serve warm with the mixed green salad.
