Homemade Focaccia Pizza with Mixed Green Salad

  1. In a large mixing bowl, combine 1 1/4 cups warm water, 1 tsp sugar, and 2 1/4 tsp instant yeast. Let stand for 5 minutes until foamy.
  2. Add 3 1/2 cups all-purpose flour and 2 tbsp olive oil. Mix until a shaggy dough forms, then knead on a lightly floured surface for 8–10 minutes until smooth and elastic. Season with salt and pepper to taste.
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour until doubled in size.
  4. Preheat oven to 425°F (220°C). Press risen dough into a greased baking sheet, forming an even layer about 3/4-inch thick. Brush the surface with 1 tbsp olive oil and use your fingertips to dimple the top. Let rest 15 minutes.
  5. Bake for 12–15 minutes until lightly golden, then remove from oven.
  6. Spread 1 cup pizza sauce evenly over the baked focaccia. Top with 1 1/2 cups shredded mozzarella, 1 cup bell pepper, 1 cup mushrooms, and 1/2 cup pepperoni. Sprinkle 1 tsp dried oregano over the top and season with salt and pepper to taste.
  7. Return to oven and bake another 10 minutes until the cheese is melted and bubbly. Slice into pieces and serve warm.
  8. In a large bowl, combine 4 cups salad greens, 1 cup cherry tomatoes, and 1/2 cup cucumber. Whisk together 2 tbsp olive oil and 1 tbsp red wine vinegar, drizzle over the salad, and toss to coat. Season with salt and pepper to taste.
