Baked Chicken with Macaroni and Broccoli Cheese and Roasted Vegetables

Ingredients

  • 4 whole chicken breast
  • 2 tbsp olive oil (Main: Baked Chicken)
  • 2 clove garlic
  • 1 whole lemon
  • 1 tsp dried thyme
  • 1 package boxed macaroni and cheese (Side: Macaroni and Broccoli Cheese)
  • 1 head broccoli (Side: Macaroni and Broccoli Cheese)
  • 1/4 cup milk (Side: Macaroni and Broccoli Cheese)
  • 2 tbsp butter (Side: Macaroni and Broccoli Cheese)
  • 1 bunch asparagus (Side: Roasted Asparagus)
  • 1 tbsp olive oil (Side: Roasted Asparagus)
  • 2 whole sweet potato (Side: Roasted Sweet Potato)
  • 1 tbsp olive oil (Side: Roasted Sweet Potato)

Tips & Substitutions

  • Substitute: boneless chicken thighs for chicken breast
  • Optionally Add: hot sauce or smoked paprika to the macaroni and cheese
  • Start the sweet potatoes first since they take the longest to roast.
  • Use frozen broccoli florets if needed to reduce prep time.

Instructions

  1. Prep: Preheat oven to 400°F. Peel and cube 2 sweet potato, trim 1 bunch asparagus, cut 1 head broccoli into florets, mince 2 garlic cloves, and zest 1 lemon. Pat chicken breasts dry.
  2. Side: Roasted Sweet Potato – Toss cubed sweet potato with 1 tbsp olive oil, season with salt and pepper, and spread on a baking sheet. Roast 10 minutes.
  3. Prep chicken and asparagus: Rub 4 chicken breast with 2 tbsp olive oil, minced garlic, lemon zest, dried thyme, salt, and pepper. Toss asparagus with 1 tbsp olive oil and season.
  4. Roast chicken and asparagus: After the sweet potatoes roast 10 minutes, add chicken and asparagus to the oven. Roast chicken 25 minutes (until cooked through) and asparagus 15 minutes, or until tender.
  5. Side: Macaroni and Broccoli Cheese – Bring a pot of salted water to a boil. Cook broccoli florets 3 minutes, remove. Cook macaroni from 1 package according to package directions, drain, then stir in 2 tbsp butter, 1/4 cup milk, the cheese packet, and the cooked broccoli.
  6. Rest chicken 5 minutes after roasting, then slice and serve.
  7. Serve baked chicken with macaroni and broccoli cheese, roasted asparagus, and roasted sweet potatoes.
